Norsage Shallot (Allium hirtifolium) is a premium wild–mountain crop native to Iran’s cold and semi-cold highlands, flourishing naturally at altitudes above 1800 meters. This rare medicinal and culinary bulb is one of the most valuable Allium species in Iran, known for its strong aroma, unique flavor, and powerful antimicrobial properties.
Grown in untouched mountainous regions and enriched by mineral-rich soils, Persian Shallot develops bright white, dense bulbs with high levels of sulfur compounds—responsible for its therapeutic effects and distinctive taste. Our shallots are harvested at the optimal stage, when the bulbs reach full maturity at the end of spring.
